Zacapa is the name of a department of Guatemala, Zacapa is the name of a city, and it is in homage to this department and this city that the rum was named Zacapa.
The Montegua River borders this city surrounded by very large areas planted with sugar cane on very poor soils. Zacapa translates in local languages close to Spanish as "the city above the clouds".
The sugar cane harvest is done once a year, from sugar cane only. Then, after some cleaning operations comes the crushing and extraction of the sugar cane juice called the Vesou and kept for 2 or 3 days for the transformation into alcohol. The vesou will then be distilled in a Charentais still in 2 heatings.
The rum will then age in French oak barrels that have been used for the aging of very old cognacs. The Zacapa rum, elaborated only from the sugar cane juice, will then age for many years, at least 25 years and it is then that it will take its name Zacapa hors d'âge XO.
The color is mahogany of Cuba very supported.
In the nose as well as in the mouth, it has a wide range of aromas of dried fruits such as prunes, apricots and almonds, elegantly intermingled with notes of mocha, cocoa, musk and Virginia tobacco. The mouth is very round with hints of vanilla and wood.
Tasting suggestion: to be enjoyed neat on ice cubes, elegant in pastries, especially on babas. Also perfect for cocktails.
The bottles will be kept upright, away from light, at normal room temperature.
