This famous wine, with an international reputation, owes its birth to a legendary tandem: Robert Mondavi owner of vineyards in Nappa Valley and Baron Philippe de Rothschild owner of the first Grand Cru Classé of Bordeaux Mouton Rothschild. This tandem, a combination of talents recognized worldwide in their profession, could only give birth to a wine with qualities of excellence.
The designated To Kalon vineyard, which covers 85 hectares, is planted with 81% Cabernet Sauvignon grape varieties, 6% Merlot Noir grape varieties, 7% Cabernet Franc, 4% Petit Verdot grape varieties and 2% Malbec grape varieties, a balance born from the experiences of the Médoc in France and the Nappa Valley in the USA, given an almost Mediterranean climate during the day, tempered by humid night and morning mists and a gravelly and siliceous soil.
The harvest, the vatting and the production of the wine are the subject of many very attentive cares. The wines are then aged in new French oak barrels from the most famous cooperages in France, for around twenty months depending on the characteristics of the harvests year after year. The wine is then bottled for minimum aging before being released.
The Opus One 2018 vintage is a remarkable wine for its olfactory and taste qualities. On the first attack, the nose offers aromas of small red fruits such as burlat cherry, blackcurrant, blueberry and raspberry. On the second attack, the wine reveals notes of candied Ente red plum, with a few hints of leather completed by beautiful and fine nuances of chocolate and mocha. The palate is ample, round, with a sensation of velvet followed by touches of well chiselled tannins with a hint of woody vanilla. The set will continue to refine over time.
Wine pairings: On a steak on the bone grilled on the barbecue or on the plancha, with herbs and spices such as black pepper, on a haunch of venison with cranberry sauce, on a shoulder of wild boar marinated in this famous wine. Will also go well with red fruit tarts with Burlat cherry or wild strawberry, will also go very well with Ente plum or mirabelle plum tarts.
The bottles are to be drunk at room temperature with a carafe one to two hours before tasting. Previously, the bottles aged in the cellar, lying down, away from light and noise, with a humidity level of around 70%. We recommend successive tastings in order to measure its qualitative peak.
